One-Pan Pesto Chicken & Veggies – via Julia Salbum

Ingredients: 1 lb. boneless skinless chicken thighs, 1/3 cup sundried tomatoes, 1 lb. asparagus, 1 cup cherry tomatoes, 1/4 cup basil pesto, 2 tbs. olive oil.

Cook time: 30 minutes

Calories: Under 350

Garlic and Rosemary Balsamic Roasted Pork Loin – via Diethood

Ingredients: 2 lbs. boneless pork loin, 2 lbs. small red potatoes, 10 garlic cloves, 1/2 cup fresh rosemary, 2 tbs. balsamic vinegar, 1/4 cup extra virgin olive oil, salt & pepper to taste.

Cook time: 1 hour

Garlic Rosemary Balsamic Roasted Pork Loin

Low-Sodium Shrimp Diablo – via Dr. Janet

Ingredients: 14 oz. frozen, extra-large, peeled and deveined shrimp, 3 tbs. extra virgin olive oil, 3 fresh garlic cloves (minced), 1 tsp. dried oregano, ½ teaspoon crushed red pepper flakes, 1 tbs. sugar, 15 oz. can diced tomatoes (low sodium), 28 oz. can whole plum tomatoes (unsalted), 3 tbs. tomato paste (low sodium), ½ cup shredded fresh basil leaves, 1 tsp. freshly grated parmesan cheese, 1 box of whole grain angel hair pasta.

Cook time: 30 minutes

Strawberry Avocado Spinach Salad – via FoodieCrush

Ingredients: 2 boneless skinless chicken breasts, 6 cups loosely packed fresh spinach, 6-8 large strawberries, 1 avocado, 3-4 thinly sliced rings of red onion, ¼ cup feta cheese, ¼ cup extra virgin olive oil, 1 tablespoon golden balsamic vinegar, 1 teaspoon sugar, 1 tablespoon roughly chopped fresh tarragon, ¼ teaspoon kosher salt, ¼ teaspoon freshly ground black pepper, 2 tablespoons sliced almonds.

Cook time: 30 minutes

Balsamic Glazed Steak Rolls – via Tbsp

Ingredients: 8 thin slices of sirloin or flank steak, 1 red bell pepper, 1 green bell pepper, 1 zucchini, 1 yellow onion, 2 tbs. extra virgin olive oil, fresh chopped rosemary to taste, salt and pepper to taste. GLAZE: 1 tsp. extra-virgin olive oil, 1 large clove garlic (minced), 1/4 cup dark balsamic vinegar, 2 tbs. dry red wine, 2 tsp. brown sugar, 2 sprigs fresh rosemary, 1/4 cup beef broth.

Cook time: 30 minutes

Zucchini Brownies – via Yammie’s Noshery

Ingredients: 2 cups finely grated zucchini, 1 cup brown sugar, 1 & 1/3 cup unsweetened applesauce, 2 eggs, 2 tsp. vanilla, 2/3 cup flour, 1 cup cocoa powder, 2 tsp. baking soda, 1 & 1/2 tsp. baking powder, 1/2 tsp. cinnamon, 1/2 tsp. salt.

Cook time: 1.5 hours

Calories: 87
